Easy Vegan Chili

Ingredients
3 16 oz. cans beans, whatever variety3 16 oz. cans diced tomatoes, no salt added2 medium zucchinis, sliced1 medium squash, sliced1 cup white mushrooms, sliced2 bell peppers, chopped1 large onion2 cloves garlic, choppedolive oil2 tbsp. cumin2 tbsp. chili powder1 tbsp. oreganosalt and pepper to taste
Directions
Makes 8 1-cup servings.

You can vary the types of vegetables or beans to get rid of leftovers or clean out the pantry. Make this non-vegan by adding 1 lb. of ground turkey, beef or chicken to the onions as they saute.

Saute onions, garlic and olive oil on high heat until onions are tender. Drain all but one can of beans of liquid. Add remaining ingredients, stir, and reduce heat to medium-low. Let simmer 1 hour or until chili is desired thickness.
