Chinese Noodle Soup Bowl

Ingredients
4 c vegetable broth2 c water1 bell pepper, chopped2 lg carrots, chopped2 lg stalks celery, chopped2 bunches scallions, chopped (whites and greens)8 oz mushrooms, sliced2-3 cloves garlic, sliced1 inche ginger, sliced1/4 c soy sauce4 oz dry noodles (I used 6 oz soba noodles)1 bunch greens, sliced (I used chard)
Directions
Saute carrots, celery, and bell pepper in a little bit of vegetable broth until tender - about 10 minutes. Add remaining broth and water. Add mushrooms, scallions, ginger and garlic. Bring mixture to a boil. Add noodles and cook until al dente. Remove from heat. Add greens and stir to wilt. Serve immediately.
