Stovetop Scalloped Potatoes

3 large potatoes peeled and sliced 1/4 inch1 can Cream of Celery Soup1/2 cup light sour cream1/4 cup milk1 tsp dry minced onion1 Tbs dry parsley flakes1/2 cup shredded cheddar cheesesalt and pepper
Put sliced potatoes in large skillet and cover with cold water and 2 tsp. salt. Bring to a boil, lower heat and simmer about 10 minutes or until potato slices are tender.
Drain potatoes.
Mix soup, sour cream, milk, minced onion and and add to potatoes in skillet. Cover and cook on low heat until bubbly and heated through. Add salt and pepper to taste.
Transfer potatoes to a serving dish and top with cheddar cheese. Garnish with paprika and parsley if desired.
