Ingredients
1# dry lentils 1 lg. onion, chopped1-10 oz. pkg. frozen chopped spinach, thawed and drained2-3 cloves garlic, minced 1-15 oz. diced tomatoes in juice1 Tb. olive oil or ghee1 Tb. curry powder1 tsp. cumin seed1 tsp. turmeric1 tsp. salt
Directions
Heat olive oil in soup pot; add lentils and sauté until lightly browned. Add onion and garlic and sauté until onion is translucent. Add spices and sauté one minute. Add tomatoes and water to cover, simmer till lentils are tender. Add spinach and cook another 5 minutes. Serve over rice and topped with plain yogurt. Serves 6.
