Mozarella, Spinach and Tomato Omelet

Ingredients
3/4 c. Egg Beaters with 1 T. water1 c. fresh spinach leaves1 c. diced plum tomatoes1/4 c. part skim shredded mozzarella cheese1/2 whole wheat english muffin, toastedNonstick Cooking Spray
Directions
Heat a nonstick skillet coated with nonstick cooking spray over medium heat. Add the whisked eggs and allow to cook for about 2 to 3 minutes. Then add in spinach, tomatoes, and cheese and fold over into an omelet. Allow to cook for 2 to 3 additional minutes. Serve with toasted English muffin half.
