Roasted Cauliflower Gratin

Ingredients
1 large head cauliflower separated1 clove garlic, chopped2 tsp. olive oil1/2 cup breadcrumbs2 tbsp grated parmesan cheese1 tsp dried parsley1/4 tsp salt1/8 tsp pepper
Directions
Preheat oven to 400 degree F. Coat baking dish with nonstick cooking spray. Add cauliflower, garlic and olive oil; stir to coat. Add 1 tablespoon water. Cover with foil; bake 20 minutes

Combine breadcrumbs, cheese, parsley, salt and pepper in small bowl; set aside.

Remove cauliflower from oven. Uncover; sprinkle with breadcrumb mixture. Return to oven; bake 20 minutes more or until cauliflower is tender.
