1 tsp olive oil1/2 cup frozen or fresh broccoli1/4 cup diced onion2 eggs1/4 cup shredded cheddar cheeseMay add 1-2 tbsp milk to eggs (I didn't)salt/pepper to taste
First, I heated up broccoli in microwave for about 2-3 min. In frying pan, cook onions in olive oil until tender. I also added the chopped broccoli to the onions in the pan and let it cook as well. In bowl, mix eggs and add cheese. Pour broccoli and onions in muffin pan sprayed with Pam and then pour egg and cheese mixture over veggie mixture. Bake for about 20 minutes at 375 degrees.
