Turkey Vegetable Soup with Quinoa

Ingredients
Ingredients:2.3 pounds - raw turkey breast cut into cubes1 tsp dried time leaves1 tsp dried sage1 tsp dried basil2 bay leavesCarrots, raw, 1.5 cup, chopped Celery, raw, 1.5 cup, dicedRed Bell Pepper, 1 cup choppedOnions, raw, 1 cup, choppedOkra, 1.5 cup slicesQuinoa, 1.5 cup Low Sodium Vegetable Broth, 8 cupsWater, 10 cup
Directions
Bring water to boil and add herbs and bay leaves,
Boil chopped turkey breast in herbed water for 15-20 minutes until cooked.
Add vegetables and broth - simmer for 10 minutes.
Add quinoa and simmer for 10 minutes more.
Add or decrease water to taste.

Serving Size: Makes 10 1.5 - 2 cup servings
