1/2 pound of very lean ground beef1.5 Tablespoons olive oil1/2 cup of chopped onion1/2 cup of chopped tomato1/2 cup of chopped green bell pepper1 cup of cooked chopped cauliflower1 teaspoon of minced garlic1 small can of V-8 juice (5.5 oz.) low sodium1/2 tablespoon of curry powder1/2 teaspoon of cinnamon1/2 teaspoon of ginger1/4 teaspoon of ground red pepper
Chop the vegies and saute in a large nonstick skillet with the olive oil. Saute until the vegies are soft. Add the spices and lean ground beef. Stir until the meat has no large clumps and is no longer pink. Add the V-8 juice. Simmer on low for 10 minutes. Taste for seasoning. Add salt and pepper to your taste.
