Sweet Potato Pie

Ingredients
1 pound sweet potatoes1/2 cup butter, softened1 cup white sugar1/2 cup milk2 large eggs1/2 tsp ground nutmeg1/2 tsp ground cinnamon1 tsp vanilla extract1 9" ready to cook frozen pie crust.
Directions
1. Boil sweet potatoes with skin on for 40 to 50 minutes, or until done. Take skin off by running cold water over the potatoes.

2. Break apart sweet potatoes into a bowl. Add butter and mix well with a mixer on medium speed. Stir in sugar, milk, eggs, nutmeg, cinnamon, and vanilla. Beet on medium speed until mixture is smooth. Pour into unbaked 9" pie crust.

3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes. Knife inserted should come out clean. Pie will puff up , but will sink as it cools.
