Oven Roasted Spiced Butternut Squash

4 cups peeled, and cubed butternut squash1 cup onion( red is best)1 Tbsp olive oil2 tsp garam masalaCilantro( 2 tbsp fresh, chopped or to taste)Salt and Pepper to taste
Peel and chop butternut squash. I calculated for 4 cups, but usually just prepare 2 whole squash. Chop an onion and mix together with squash in a large rectanglular baking dish. Drizzle oil over vegetables and then sprinkle with garam masala or spices of your choosing. Salt and pepper to taste. Roast in the oven at 350F for 30-45 minutes. Keep an eye and stir once in a while for even cooking and browning. Once squash is cooked to your satisfaction remove from stove and add the fresh cilantro.
