Mung Bean Stew

Ingredients
1 cup dried mung beans2 med. carrots cut into 1/4 inch pieces2 med. stalks celery cut into 1/4 inch pieces1 med. onion, chopped1 clove garlic, minced2 cans diced tomatoes4 slices bacon, chopped3 Tbsp lite soy sauce1 tsp black pepper1 3/4 cups water
Directions
Cook bacon on high heat for 1 minute. Add onion and garlic, cooking until starting to color. Add beans, tomatoes, soy sauce and pepper and water. Reduce to simmer and cook for 25 minutes. Add carrots and celery and continue cooking for 35 minutes or until vegetables are tender and beans are soft.
