Crockpot Candied Acorn Squash

Ingredients
2 acorn squash2 medium apples, peeled, cored and diced1 Tbs. butter, melted (I use a butter substitute)2 Tbs. brown sugar1 Tbs. chopped pecans or walnuts1/2 tsp Kosher salt1/2 tsp ground cinnamon
Directions
Cut the acorn squash in half. It's easier if you microwave the squash for a minute on high to soften the skin. Then use a knife to cut off the stem and slice the squash in half. Scoop out the seeds and discard. In a small mixing bowl, combine the cut up apple, melted butter, brown sugar, nuts, salt and cinnamon. Scoop into the acorn halves and place them into the empty crockpot - skin side down. It's okay to stack them. Cover and cook on low for 5 hours or on high for 2 to 3 hours.
