Gluten Free Sweet Potato Hash

Ingredients
Directions
1/2 cup onion1/2 cup red, orange, yellow peppers.5 Jennio O spicy turkey sausage.5 tsp cuminT sage3 egg whitescilantrohot sauce optionalsalt and pepper to taste, doesn't really need it.
Saute onion, bell peppers, sausage, cumin. Cook for about 3 min.
Add sweet potatoe and hot sauce. Cook 4-5 min
Add the sage or cilantro and cook 1 minute. Remove from skillet and set on a plate.
Fry the egg whites for 3 min, flip and cook an additioanl minute. Place eggs over has. Season and serve.
I like to modify with red potatoes or rice for starch or chicken breast and flank steak for sausage. Make a double serving and you have breakfast the next day or an afternoon snack.
