PANKO-CRUSTED SALMON (Barefoot Contessa)

Ingredients
4 - 6oz salmon fillets2/3C panko breadcrumbs2 Tbsp fresh parsley2Tbsp EVOO2 T Dijon mustard1 teaspoon lemon zest
Directions
heat oven to 425 degrees

mix together panko, parsley, lemon zest. drizzle with EVOO and set aside.

salt & pepper the salmon to taste. coat the salmon with mustard. press the panko mixture on top of salmon. mustard helps the panko stick

cook for 22-25 minutes. can serve with lemon wedges if desire.

note: this is not exactly how barefoot contessa cooks it, but this is the way I did it.

    I added crushed walnuts to the topping and omitted the mustard (so I guess that's substantially changing the recipe) and it was delicious! I would definitely recommend adding more lemon than is called for here, and serving with lemon wedges -- they really punch it up. - 1/7/13
