Quick "Caramel" Corn

Ingredients
1/3 cup unpopped corn3 Tbsp canola oil3 Tbsp brown sugar1 tsp vanilla extract
Directions
Put oil, sugar and vanilla in a stove-top popper, such as the WhirleyPop. Add several kernals of corn. Cook over medium heat, stirring constantly, until the sugar melts and the kernals begin to pop. Add the remaining 1/3 cup of corn and continue stirring until popping slows. Pour out into a pan to cool, break apart into individual pieces and store in airtight container.

Makes approximately 10 1-cup servings.
