3/4 c buckwheat flour3/4 c Bob's Red Mill Gluten-Free All Purpose Flour1 c quick cooking oats1 T baking powder1/2 t cinnamon1/4 t xanthan gum1/4 t salt6 T warm water2 T ground flax seed1 1/2 c unsweetened almond milk6 T Earth Balance Vegan Buttery Sticks, melted2 T Sugar in the Raw (turbinado sugar)
Combine warm water and ground flax in a small bowl; whisk vigorously and set aside. In a large bowl, combine flours, oatmeal, xanthan gum, cinnamon, baking powder and salt. In a medium bowl combine flax mixture, milk, melted butter and sugar, and mix until well blended. Add the flour mixture and stir just until blended.
Pour approximately 3/4 to 1 cup batter onto a preheated, non-stick waffle maker and bake according to manufacturer's instructions.
Makes 6 medium waffles.
Serving Size: 1 medium (heart-shaped) waffle.
