Ingredients
3 assorted sweet red/yellow/orange peppers1.25 Cups uncooked Quinoagarlic1 bunch scallionsCilantrocuminsoy saucepineapple juiceextra virgin olive oilsalt & pepper
Directions
roast or grill peppers and cut into thin strips, roast garlic, cook quinoa according to package directions. mix soy sauce, pineapple, olive oil, cumin, salt & pepper in a bowl, once quinoa and peppers are cooled, mix together.
