Chocolate Beetroot Brownies

400gr peeled, cooked beetroot100gr bertolli olive spread200gr plain chocolate 70%1tsp vanilla extract250gr golden caster sugar3 eggs100gr rice flour25gr cocoa powder
1. Put beetroot in food processor (discard juice)whizz until finely chopped. Melt chocolate and bertolli together in microwave aprox 2mins on medium, add to beetroot and whizz again until smooth.
2. Heat oven 180c/160c fan gas4. Line and grease baking tin.
3. Whisk the eggs and sugar and vanilla together until thick, pale and foamy (about 2 mins).
Fold the beetroot mixture into the egg and sugar. Sift in the flour and cocoa powder, carefully fold this in.
4. Pour into prepared tin and bake for 25mins, until top springs back when gently pressed.
Serving Size: makes 25cmx25cm (12 portions)
