Black-Eyed Pea Soup

Ingredients
3 1/2 c. dried blackeye peas12 c. water1/2 c. dried minced onion6 Tbsp. chicken bouillon Instant granules2 Tbsp. dried parsley flakes1 Tbsp. granulated sugar2 tsp. dried minced garlic 1 tsp. chili powder1 tsp. onion powder1/2 tsp. black pepper1/2 tsp. garlic powder14.5 oz. can Del Monte Diced Tomatoes, no salt added
Directions
Rinse peas and place in a microwave safe dish. Cover with water, 1 to 2 inches over top of peas. Cover dish loosely with plastic wrap and microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse peas very well. Place peas in a large soup pot. Add water, seasonings and tomatoes. Cover, bring to a boil. Lower heat, cover and simmer for about 90 minutes or until peas are tender. Stir occasionally while the soup simmers.
