Oatmeal Coconut Cookies

Ingredients
1 c. white sugar1 c. brown sugar1 c. shortening2 eggs2 c. flour1/2 t. baking soda1 t. vanilla1 c. coconut1 1/2 c. oats3/4 cup nuts, optional
Directions
Cream shortening, sugars & eggs. Add vanilla. Add all dry ingredients and mix well. Form into balls and place on baking sheet. Bake in 350 degree oven for 11-12 minutes. Makes 42 cookies.

    Haven't made yet, but plan to. Looks yummy, although maybe not too healthy. Might make a few changes, like using egg whites only and splenda to make it healthier. - 1/13/08
