4 quarts water2 cups Spenda brown sugar blend1 cup lite soy sauce1 cup maple syrup3/4 cup sea salt8-10 whole cloves garlic, peeled6-8 whole bay leaves3 large sprigs of thyme2 teaspoons whole peppercorns10 - 12 lb whole turkey, giblets/neck, gizzards removed
Place 2 quarts of water and other ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup. Remove from heat, add remaining 2 quarts and allow brine to cool completely before using.
Submerge whole turkey in brine solution for 24 hours; use a large stock pot or brining bag to hold the solution, rotating the bird as needed.
Remove bird from brine solution & pat dry, then cook as per your preferred method.
