Rustic Stuffing with Apples & Cranberries

3 cups sourdough bread, cubed & dried or toasted1 1/2 cups celery, chopped1 large onion, chopped1 granny smith apple, peeled, cored & chopped1 cup dried cranberries1 can chicken broth1 Tbsp. dried thyme1/2 cup fresh parsley, chopped1/2 tsp. salt1/4 tsp. black pepper
Saute onion and celery in butter till crisp tender. Add garlic, parsley, thyme, salt & pepper, apple & cranberries. Add bread cubes and chicken broth. Stir till mixed. Place in a greased 9x13 casserole dish. Bake at 350F for 30 minutes.
