100% Buckwheat Pancakes

Ingredients
2 cups buckwheat flour1 tsp. baking powder1 tsp. salt2 Tbsp. sugar2 large eggs2 cups Silk plain light w/calcium1 Tbsp. melted butter1 Tbsp. canola oil
Directions
Spray griddle with non-stick cooking oil and preheat.
Stir dry ingredients together in med-large bowl.
Beat eggs; beat in milk, butter & oil. Add liquids to dry ingredients and beat or whisk just until lumps disappear. Ladle 1/4 c. batter onto hot skillet for each pancake. Cook until bubbles in pancakes no longer collapse; turn pancakes over & cook until steam stops rising. Serve hot!
