Jo Jo's Tandori Chicken with Orange Cilantro Rice

For the chicken:4oz dannon light & fit yogurt1 sm jalenapeno diced small1 stalk celery chopped small2 tsp garlic1 tsp lime juice2 tsp paprika1.5 tsp ground cumin1 tsp coriander4 boneless chicken breasts (12 oz)For the rice:1 scallion chopped.5 Tbsp extra virgin olive oil3/4 cup brown rice quick cooking1 Tbsp orange rind1.5 cups of water1 Tbsp cilantro
for chicken combine all ingredients except chicken, brush onto chicken front and back, refrigerate 3-4 hrs or overnight. Place chicken on baking pan/dish and roast 350 degrees 30-45 minutes till juices run clear.
Rice: Saute onion, celery in olive oil till tender about 3 minutes, add rice and orange rind cook over med heat until lightly browned, about 2 min. Add water, heat to boiling, reduce heat simmer and cover until rice is tender about 20 min. stir in cilantro...serve with chicken
