Spicey Black Bean Soup

1 Kielbasi - 12-16 oz - cut into chunks1 can (14oz) diced petite tomatoes3 cans black beans (or 2 large cans) with juice1-2 (black bean) cans of water1 large onion - chopped3 large carrots chopped1-2 bell peppers - red & yellow add color, green is fine too.1-2 jalapeno peppers (to taste)1 tbsp garlic1 tsp basil (dried)1 tsp oregano (dried)1 tbsp olive oilSalt & pepper to taste
In large soup pot:
Saute chopped veggies in olive oil - 3-5 mins.
Add Kielbasi and spices & jalapenos - blend 2-3 mins
Add Black Beans with juice and water.
Simmer med-low for 30 mins.
Serving Size: Serves 8 - 1.5 cup servings
