Cheesy Cauliflower Soup

Ingredients
4 cups Cauliflower, raw, 600 grams Shallots, 1 tbsp chopped 10 g 2-3 T finely chopped Cellery, Raw - (11" - 12" long) (32g) 1-2 T finely chopped Carrot, raw, 1 medium (7-10 g) 3 cups chicken stock Salt, 1 tsp 2 tsp. white vinegar 1.5 cup*Almond Milk, Silk Original Pure Almond Milk, 6.5 oz /1.5 cups grated Tillamook Extra Sharp Cheddar 1 tsp*Xanthan Gum, 1 tbsp *Bacon Bits - Kirkland,
Directions
Put the cauliflowe, shallot, celery, and carrot in a soup pot. Add chicken broth, salt, and vinegar; bring up to a simmer and let cook for 30-45 minutes.
Stir in the Almond Milk and then whisk in the cheese a little at a time, letting it melt between additions. Thicken it more with xanthan gum to your satisfaction. Throw in bacon bits or use for garnish.

Serving Size: Makes 5 one and a half cup servings.
