Pumpkin Spice Carrots

Ingredients
3 large carrots (the kind you buy in the bulk bag4 packets of sweetener (I used Truvia)1 tablespoon pumpkin pie spiceOptionals- cloves, raisins, apple pie spice, cinnamon, etc.
Directions
Shred carrots. I use a salad shredder but a grater works fine.
Add to small pot and simmer all ingredients in enough water to cover half stirring occasionally.

If you want them crispier, reduce water and 'saute' them.
