Celery-Almond Soup

Ingredients
3 cups low-sodium vegetable broth6 medium stalks of celery, cut in half1/4 cup raw almonds1/8 lemon, peeled and seededsalt & pepper, other seasonings to taste**try fresh fennel or fennel seeds, sriracha, or Mrs. Dash Garlic & Herb blend, to name a few options
Directions
Cook celery in broth until softened. Put into Vita-Mix or other blender; add almonds, lemon, salt, pepper and other seasonings to taste. Blend until smooth.
