Philly Cheese Steak Sandwiches

Ingredients
2 T. olive oil, divided1 medium onion, sliced1 green bell pepper, thinly sliced8 medium mushrooms, stems removed and sliced1 1/2 lb. beef tenderloin, thinly sliced6 hoagie rolls6 slices provolone cheese
Directions
Heat 1 T. olive oil in a skillet. Add onions, peppers and mushrooms and sautee until tender. Remove from pan.

Add remaining 1 T. olive oil to same skillet. Add meat and cook until no longer pink. Return onion mixture to the pan toss to combine. Heat through.

Cut hoagie rolls in half, but do not cut all the way through. Open and set under broiler for a minute or two until toasted. Remove from oven. Distribute meat mixture evenly between the rolls. Top with cheese and put back under broiler until heated through.

Serve immediately. If desired, garnish with jalapeno or cherry peppers (not included in nutrition info).
