Chipotle Veggie Stew (modified from Whole Foods)

Ingredients
2 Tbsp Canola Oil1 Med. Onion2 large Celery Stalks3 small Carrots3 garlic cloves (minced)1 large tomato (diced)1 can diced tomatoes 2 cups water3 cups vegetable broth/stock1 cup quinoa2 cups green beans1 large summer squash1 large zucchini1 large bell pepper1 tsp dried oregano1-2 Tbsp chili powder1 chipotle pepper1 can garbanzo beanssalt and pepper to taste
Directions
In a dutch oven combine oil, onion, garlic, and celery. Cook until soft. Add the rest of the ingredients as you chop. Bring the entire mixture to a boil, then turn the heat down to low. Let this stew simmer for an hour or two. The longer you let it simmer, the more flavourful the vegetables become!
