Easy Tzatziki

Ingredients
1 cup, fat-free plain greek yogurt1/2 cucumber, grated finely2 cloves, garlic, mincedlemon juice, yield of 1/2 to 1 lemonlemon zestsalt and pepper to taste
Directions
Grate the cucumber using the finer blade of a box grater. Mince the garlic cloves. Mix cucumber and garlic into the yogurt. Grate lemon zest into the yogurt mixture, and squeez the lemon juice in. Salt and pepper to taste. Mix thoroughly.

Serve on falafel, kabobs, kofta, or other Greek and Middle Eastern dishes.

Serving size is 1 heaping tablespoon

Serving Size: Makes just a little over a cup, plenty for several meals
