Fish Curry

Ingredients
TilapiaOnionsCeleryGarlicOlive OilRed PeppersNonfat MilkWhite FlourCurry PowderFish SauceBrown SugarBrown RiceSalt PepperBasilParsley
Directions
Saute onions, celery and garlic in olive oil until soft. Add red pepper and saute for 1 minute. Add curry powder, brown sugar and flour. Saute for 1 minute. Slowly whisk in milk and bring to a simmer. Add fish sauce. Then season with salt and pepper to taste. While simmering, slide in fish fillets to poach. Once cooked through, turn off heat and add fresh chopped herbs. Cook brown rice until done. Serve 1/2 the fish curry over 1/2 cup rice.
