A friend gave me this recipe to make for Lent and it's delicious! You can usually find papaya and pineapple already chopped and packaged fresh at your local grocers. Ingredients

Two tilapia filets
1 teaspoon ground cumin powder
1 tablespoon curry powder
.5 Cup fresh, diced pineapple
.5 Cup fresh, diced papaya
5 tablespoons cilantro, or to taste
1 tablespoon olive oil
Course salt and pepper to taste
Directions
1. Heat olive oil on medium heat.
2. Gently rub salt and pepper on each side of the tilapia filet.
3. Rub curry and cumin onto both sides of each filet.
4. Cook tilapia until it is fork tender and white on the inside. This should take about 3-4 minutes per side.
5. While the tilapia is cooking combine the chopped pineapple and papaya with some chopped cilantro and toss. When tilapia is finished cooking top it with the fruit mixture and serve with basmati or wild rice.
