Ingredients

    1 T olive oil
    1 large onion, chopped
    2 carrots, chopped
    2 cloves garlic, chopped
    2 tsps cury powder
    1 cup long grain rice
    Kosher salt and pepper
    1 1/2 pounds large shrimp, peeled and deveined
    1/2 cup fresh basil

Directions

Heat oil. Add carrots and onion. Cook until soft. 6-8 mins
Add garlic and curry and cook stirring, until fragrant, 2 minutes
Add the rice, 2.5 cups water, 1/2 tsp salt, 1/2 tsp pepper and bring to a boil. Reduce heat to medium, cover and let simmer for 15 minutes.
Season shrimp with 1/2tsp of salt and 1/4 tsp pepper and nestle them in partially cooked rice. Cover and cook until the shrimp are opaque throughout, 4 to 5 mins.
Fold in the basil and serve

    Very Good
    I tried this recipe and it was really good. You can add more curry of you like it really spicy. I did! I also added more carrots. I may add broccoli next time! - 2/20/09
