Ingredients
1 head Cauliflower, chopped1/2 cup Onion, minced1/2 cup Celery, minced1 clove Garlic, mincedOlive Oil Cooking SprayButter SpraySalt and/or other seasonings, to taste (I use Morton's Nature's Seasons - Seasoning Blend w/No MSG.)
Directions
Process chopped cauliflower in food processor, until texture resembles rice. Heat large skillet over medium heat. Coat skillet liberally w/cooking spray. Saute onion and celery for approximately 10 minutes. Add garlic and saute for 1-2 minutes. Add cauliflower, spray butter, and salt/seasonings . Cover and cook for approximately 10 minutes, stirring frequently.

Serving Size: Makes four 1/2 cup servings.
