2 Large Eggs2 Cups White Sugar1 Cup Soft Butter or Margarine1 Cup Molasses1 Tbsp Ground Ginger1 Tbsp Cinnamon2 Tsp Baking Soda, dissolved in1 Tbsp Hot Water4 Cups Flour
Beat eggs with sugar, butter and molasses. Stir in spices and soda. Sift in flour, working it in until a smooth dough forms. Cover dough tightly and refrigerate for 15 minutes or up to 15 hours. Roll dough into balls, dip in sugar and place on lightly oiled cookie sheets. Bake at 350. For soft cookies, bake 6 to 8 minutes. For rock-hard cookies, bake 10 minutes.
