Mini Spinach Pasta Shells

3 servings Mini Pasta Shells1 1/2 cups Tomato Sauce, no salt added1/2 cup Red Pepper, diced1/2 cup Green Pepper, diced1/2 cup Onion, diced2 Garlic cloves, minced1 Tbsp Basil1 tsp Oregano1 tsp Cumin1 cup Spinach, chopped
1. Cook pasta shells according to package instructions.
2. Dice red and green bell peppers. Dice onions. Chop spinach. Mince garlic.
3. Add tomato sauce, peppers, onion, garlic and herbs to a saucepan. Cook until peppers are tender yet crisp.
4. Remove from heat. Combine pasta, sauce mixture and spinach.
Serving Size: Makes 3 1-cup servings
