Beef Skewers with Chimichurri Sauce

Ingredients
500g Sirloin Steak, cut in 3 cm cubes12 Bay leaves - freshextra virgin olive oil1 tsp ground cuminsauce1 long red chilli2 garlic cloves1/3 cup extra virgin olive oil3 tbsp red wine vinegar1 tsp hot smoked paprika2 tbsp fresh coriander2 tbsp flat leaf parsley
Directions
Thread pieces of meat alternatively with bay leaves on 4 skewers (leave a small gap between the meat). Brush with olive oil and sprinkle with cumin. Cook on a hot BBQ or under a preheated grill until cooked. Remove from heat and allow to rest.

While steak is resting make sauce by putting chilli, garlic, oil, vinegar and paprika in a blender. Combine well. Add herbs and blend for 5 seconds.

Serve with skewers.
