Maple-whiskey braised pork chops

Ingredients
Pork chops, boneless centre cut (3/4 lb)1 clove garlic, crushed1 tbsp thyme1 tsp tarragon1 tbsp salt1 tbsp coarse-ground black pepper1 tbsp olive oil3/4 cup vegetable or chicken broth, divided1 tbsp corn starch1 oz maple whiskey1 tbsp maple syrup1/2 tbsp mustard seed1 bay leaf
Directions
Add oil to hot pan.
Mix salt, pepper, thyme, and tarragon together.
Rub chops with crushed garlic and herb mix.
Brown both sides of chops in hot pan.
Add 1/2 cup broth, whiskey, bay leaf and mustard seed.
Cover and simmer on low for 45 min.
In a small bowl, whisk together remaining broth, corn starch, and syrup.
When chops are tender and cooked through, remove from braising liquid. Add cornstarch mix and stir thoroughly until thickened.
Serve chops with 2 tbsp of gravy.
