1 tbsp. olive oil225 grams boneless skinless chicken breast, cubed1 med. onion, diced3 cloves garlic, minced4 tsp. gingerroot, minced2 tsp curry powder1-1/2 tsp cumin3 cups cauliflower florets1 can diced tomatoes, undrained1/4 cup water (omit if using frozen cauliflower)1/4 cup Miralce -whip calories wise dressing
Heat oil, add chicken, onions, garlic; cook 3 mins. Stirring occasionally. Stir in ginger, curry and cumin; cook and stir 1 min.
Add next 3 ingredients. Bring to a boil; simmer on medium for 10 mins. Stirring occasionally.
Remove from heat, stir in Miracle-whip until well blended.
Serving Size: 4 servings of 1 1/2 cups
