Batya's Amaretti Cookies

Ingredients
2.25 cups Honeyville Blanched Almond Flour2 egg white, at room temperature2/3 cup sugar, divided in half1/3 cup dried cranberries1 tsp vanilla extractpinch of salt
Directions
preheat oven to 375F, line a baking sheet with parchment paper.

in a bowl, combine almond flour, 1/3 cup sugar and a pinch of salt

in a mixer, whip egg whites and a pinch of salt until they start to turn, then slowly mix in remaining 1/3 cup of sugar. whip to soft peaks

add dry ingredients plus cranberries, vanilla and lemon zest to the egg white mixture, fold ingredients together gently. the batter will be very thick.

use an ice cream scoop to shape cookies and place on parchment paper. the cookies will not spread so they only need a little space.

cook for about 17 minutes, or until slightly brown on tops. allow to cool. store in the refrigerator, they're good cold.
