Chocolate Chip Pumpkin Bread (Vegan)

Ingredients
- 1 1/2 cups Gluten-free Baking Mix- 1/2 cup Oat Flour- 1 1/2 tsp baking powder- 1/2 cup vanilla coconut milk- 15 oz can Pumpkin- 1/4 cup turbinado sugar (sugar in the raw)- 1/2 cup dark brown sugar- 10 Tbsp (1/2 package) vegan Chocolate chips- EnerG (egg replacer) for 1 1/2 eggs, mixed with 3 Tbsp seltzer water
Directions
Mix it all together (I used a hand mixer) in the order given. Pour into greased loaf pan (I sprayed with PAM). Bake at 350 for 40 minutes, then cover with foil and bake for another 25 - 30 minutes, until a toothpick comes out clean.
