Pinto Bean, Corn, and Pepper Mix

Ingredients
This is much tastier than it looks or sounds!!!1 can pinto beans1/4 cup red onion1 jalapeno, chopped1 tsp garlic1/2 tsp cumin1 cup frozen corn1 cup diced bell peppers
Directions
In a skillet with a little oil, Saute onion, jalapeno and garlic. Add cumin and beans (rinsed and drained). Halfway through cooking mash about 1/2 of the beans. Add corn and bell peppers (any color). Cook until done.

Top with Fat-free or light sour cream, hot sauce, low-fat cheese.

Makes 2 2-cup servings.
