Hurst's 15 Bean Soup w/ pork neck bones

1 pkg. Hurst's 15 Bean Soup Beans3 lbs pork neck bones1 med onion - chopped1 - 14.5 oz can diced tomatoes3-4 gloves garlic - chopped1 tsp. Chipolte Chili PowderJuice of 1 lemon
quick soak beans by placing in 2-3 qt's cold water, bring to boil. Boil for 3 minutes and turn off heat for 1 hour. Drain and rinse.
Add 2 qts of water to beans and meat. Bring to a boil. Reduce heat to a simmer and cook for 2.5 hours.
Add onion, garlic, tomatoes and seasoning. Simmer for 30 minutes.
Add contents of ham seasoning packet 1-2 minutes before complete. Salt and pepper to taste.
