Vegetable Beef Soup

Ingredients
lean beef roast, 1 1/2 #onion, medium, chopped8 cups water2 cups tomato juice2 bay leaves1/4 - 1/2 teaspoon chili powders and p to taste1 sm. can VegAll1/2 cup white ricemedium potato, dicedfrozen mixed vegetables as desired
Directions
Cut beef into small bite size pieces and brown in dutch oven. Add chopped onion, cook until soft. Add water, juice, s and p, chili powder and bay leaves. Simmer, covered, for about 2 hours, until beef is tender.

Add rice and simmer, covered, for 10 minutes. Add diced potato, VegAll and frozen veggies (if desired) and simmer about 10-15 minutes until potatoes are cooked but not mushy.

Serving Size: Makes 12 - 1 cup serving
