Non-Dairy Vegetable Quiche

2 red pepper, diced 2 zucchini, unpeeled and diced 1 onion, diced 1 4 oz can mushrooms, drained salt, pepper, garlic powder to taste 1 cup non dairy creamer or milk substitute 3 eggs, beaten 2 frozen pie crusts
1.Preheat oven to 350. Remove pie crusts from freezer.
2. Saute the pepper, zucchini, onion till soft. Add mushrooms and season to taste. Let cool. Add creamer and eggs and mix well. Pour into 2 crusts and bake around 1 hour till nicely browned.
Serving Size: Makes two pies, 8 servings each.
