Baked Chicken Cacciatore

Ingredients
3 pounds boneless skinless chicken thighs2 tbps olive oil2 tbsp minced garlic1 can sliced mushrooms1 can diced tomatoes10 drops sugar twin liquid3 tsp italian seasoningSalt and pepper to tasted
Directions
Place on tbsp of olive oil in a baking pan with minced garlic, drained mushrooms, and half the seasonings, spread out to cover the bottom of the pan. The chicken should just snugly hold all of the chicken in a single layer.
Place chicken on top of the mushroom, garlic mixture.
Baste with remaining olive oil and sprinkle remaining seasonings over chicken.
Bake uncovered at 350 for one hour.
Add tomatoes and sugar twin drops spreading them uniformly over the chicken.
Bake uncovered for an additional hour, or until most of the liquid from the tomatoes is absorbed. Check the chicken occasionally and baste with the pan liquids if it is browning too quickly.
