left over london broil cooked, and pre seasoned. cut into bite size cubes1 can fire roasted tomatoes1 can dark red kidney beans1 can light red kidney beans1 roasted bell pepper diced (roast these in batches and have them in the freezer for these kinds of meals)Season to taste the following:SaltpepperT cuminT garlic powder or 1-2 cloves garlic choppeddiced onion1 tsp cayenne powder
pretty much everything is pre cooked so add all the ingredients to a crock pot or sauce pan and bring to a boil. reduce heat to a simmer so all the flavors blend together. roughly 45 minutes.
garnish with fresh salsa, cilantro, hot sauce, and sliced olives if desired.
