Dilled Creamed Potatoes

Red Potatoes, 1 lb. peeled and cubedOlive Oil, 1 tbspOnions, raw, 1 small, choppedGarlic, 2 clovesFat free half and half, 2 cupsDill weed, fresh, .5 cup chopped
Place potatoes in a large pot with enough water to cover. Bring to a boil and cook for 15 minutes, or until tender.
Heat olive oil in a skillet over medium heat and cook onion and garlic until tender.
Drain potatoes and return to pot. Pour in cream, and mix in onion, garlic, and dill. Bring to a boil, reduce heat to low and simmer 20 minutes, stirring occasionally, until thickened. Season with salt and pepper.
